“Things My Grandma Told Me”: Mama Mia X’s T.G.I.F. Fried Fish & Shrimp Pasta

When I was a little girl, most of the city of New Orleans ate seafood on Fridays. The old folks use to say we eat nothing that walked the land on Fridays, so the smell fresh seafood frying, boiling, and grilling would light up blocks for miles around the different wards, projects, and outskirts of the 504.

My grandma was really good at keeping our seafood meals tasty and different. She made all kinds of rouxs (gravy) and sauces that made our seafood go perfect with rice, potatoes, or pasta. I paid attention when I was in Mamaw’s kitchen, and her quick Garlic Parmesan Sauce over Spaghetti was always one of my favorites.

She would pan sear shrimp whenever she made the sauce, but today I’ll be adding my twist by serving it with fried fish and shrimp.I’ve remixed many of my grandma’s recipes, but I think this is one that she would really be proud of.

She was passionate about us knowing how to good, having a good work ethic, and not being no one’s fool. I remember helping her in the kitchen, and while giving instructions, she was also lacing me with her words
of wisdom, as we poured our love and hearts into the meals we prepared. She’d say, “A closed mouth don’t get fed. A lazy ass dont get paid, and a Man knows what his woman needs. Y’all young girls always talkin’ ’bout good d*ck….Well, baby, good d*ck help you with your bills and make ya leg shake”!”

I used to laugh so hard, all the while I was learning to cook and collecting life jewels. So live from my kitchen, we gon’ get this T.G.I.F. meal poppin’, baby. Let all your peeps know that you about to whip up a Fried Fish and Shrimp Pasta in a delicious garlic parmesan sauce.

Make sure you play my music below while you cook, because Jamming is essential when you’re at the stove. Follow me on Twitter (@TheRealMiaX), and join my Twitter squad #TeamWhipDemPots, where we cook, twitpic our meals, and inspire.

Mama Mia X’s T.G.I.F. Fried Fish & Shrimp Pasta

Make Your Groceries (Ingredients):

Serves 6
1 12oz pk of Thin Spaghetti
1lb medium shrimp cleaned and deveined
4 catfish or fish filets of your choice, cut into strips of nuggets
1 egg, beaten
4 garlic cloves, chopped fine
1 tsp garlic powder
1/3 cup of milk
1/3 pasta water
1/2 cup of whipping cream
4 oz of soft Philly cream cheese
3 Tbsp of fresh parmesan cheese
3 Tbsp of dry grated parmesan
3 Tbsp of butter
1/3 cup of flour
1 cup of Zatarains crispy southern style seasoned fish fry
2 Tbsp of salt
1 tsp pepper
1 tsp Creole seasoning (I use Zatarains)
1 Tbsp crushed red pepper
3 cups of vegetable oil
dry or fresh parsley

In a large pot, bring 4 quarts of water and 2 Tbsp of salt to a boil. Add your spaghetti and let cook for about 11 minutes.

After pasta is tender, drain but Do Not Rinse and save 1/3 cup of your pasta water. Once pasta is drained, place it back into your pot.
Heat your oil on medium. In a bowl, add milk to your beaten egg and dip your shrimp, then place them into the flour, then the fish fry.
You can either do this with bowls or freezer bags. Make sure the shrimp is coated with flour and fish fry. Fry for about 8 minutes.

Place your fish into the fish fry then fry about 10-12 minutes. In a pan, add 3 Tbsp of butter and saute your chopped garlic. Add your whipping cream, pasta water, soft cream cheese, and fresh and dry parmesan cheese. Wisk over a medium low heat until smooth.

Pour your sauce over spaghetti, add your crushed red pepper, garlic powder pepper, and creole seasoning, and mix evenly so that all of the spaghetti has sauce. Plate your pasta and top with your fried seafood. Garnish with fresh or dry parsley, and you can also add more salt or creole seasoning according to taste. This dish works well with a garden or green salad, or asparagus, and garlic bread or dinner rolls.

Boosie Avoids Death Penalty; Anonymous Jury Selected For Trial

(AllHipHop News) The trial of rapper Lil Boosie will start on April 30 and the controversy has already started.

Prosecutors have announced that they will use an anonymous jury for the first-degree murder trial of Lil Boosie.

During the trial, jurors will only be identified by numbers and not their names.

Prosecutors said that Lil Boosie will also face a mandatory life sentence if he is convicted of the murder.

The decision to use an anonymous jury was used because of the high-profile nature of the case.

Both prosecutors and Lil Boosie’s lawyers noted that there were no specific security concerns or safety threats.

“It’s just something we thought would be better for the case and the jurors,” East Baton Rouge Parish District Attorney Hillar Moore III told The Advocate.

“There’s no evidence of any threats against any potential jurors in this case,’’ added Martin Regan, one of the rapper’s lawyers. “We want to get a fair jury.”

Prosecutors claim Lil Boosie, born Torrence Hatch, hired Michael “Marlo Mike” Louding to kill 39-year-Terry Boyd, in October 2009.

Also charged in Boyd’s death is Adrian Pittman, 37 and Michael “Marlo Mike’’ Louding, who was 16 at the time of the slaying.

Louding is also accused of murdering five other men.

Lil Boosie is being held in the Louisiana State Penitentiary at Angola.

Hip-Hop Rumors: T-Pain Sets The Record Straight After Toya Blasts Him On Twitter

Reality star and Lil’ Wayne’s ex-wife Toya Wright defends her new husband Memphitz like a lioness defending its cubs.

Last night, she had Twitter buzzing while watching the premiere of T-Pain’s VH1 “Behind The Music” special after she tweeted ‘F*CK TPAIN!…Turns Channel‘, because her husband was not given credit in the special.

The story goes that her husband Memphitz (an A&R intern at Jive at the time) discovered T-Pain after he was handed his music by a mixtape DJ. Memphitz signed T-Pain to Jive, A&R’d his project, and launched him into musical superstardom with the release of his biggest hits “I’m Sprung” and “I’m In Love With A Stripper”.

The success of T-Pain and other signees to Jive helped Memphitz obtain his own imprint through the label and eventually secure a position as VP of A&R; however, this piece of info was left out of the VH1 special, which left Toya very upset.

Memphitz was also annoyed by the omitted info and tweeted:

LooVe I dont get enuff of it, all I get is these Vampires & Blood suckers, all I see is these n-ggas I made Millionaires….

When ur Past Fails prepare u 4 Your Future Successes. It All Begins 2 Make Perfect Sense. #MiDDLEFiNGER2MYOLDLiFE #GODSPEEDAHEAD #BANG

GOD Sent Her To Me. #NowWhoGoNSTopMeHuh?

Of course, you know T-Pain was going to respond and did just that. Check out some of his tweets below:

I did a 6hr interview for Vh1 and didn’t control what they cut out. I told the whole story. But if it’s “f-ck me” then that’s what it is

If all it takes for you to say “f-ck t pain” is havin your part of the story cut out by a network. Then what kind of friend is that anyway

Get at me bra. It’s easy to get on twitter and say f-ck t pain but you can’t get on here and say Thanx for 100k and the three cars

It’s all good tho. I’m used to it by now. I just didn’t expect it from you. Good luck with the new show.

You got my number bra. I got a missed call from you two nights ago. So if we gone have a talk I’d rather not do it on twitter yasimelike

[Akon’s brother] @bukonvict you see ya boy and his girl goin in on me? How long was your interview? And how much important sh-t did they cut out your sh-t?

Fortunately, it seems as if the issue was hashed out, because Memphitz tweeted hours later:

There is NO BEEF. ABSOLUTLEY NONE. So Stop Looking For It TweepLe. #IMWORKIN

Exclusive: King Louie [BGA] Releases “Motion Picture” Mixtape, Preps “Dope and Shrimp” Debut Album

(AllHipHop News) AllHipHop.com spoke exclusively with newly dubbed Breeding Ground Artist, King Louie, recently about his growing online buzz and devoted following in the streets of Chicago.

Representing the East Side of Chicago in an area called “Dro City” named after one of his assassinated brothers, King Louie has released music under the Lawless Inc. imprint, a label co-owned by Larro Wilson and Johnny Monopoly, Kanye West’s former manager.

“You know working with John is good, and it’s a big step, and it’s showing me that hard work pays off. He introduced me to Larro the CEO of Lawless, and he got me right and shows, the promotion is better. I’m able to work and not be so hands on with the promo; I can just focus more on recording and music. I got a team now instead of it being just me, its a whole team of muhf*ckas. John has introduced me to quite a few relevant people that I need to know.”

With his mixtape entitled Motion Picture releasing this week, Louie is now prepping for his new album, Dope and Shrimp.

“Lately, in the past couple of months, I’ve been working on finishing up Dope and Shrimp, the album, and then I got a whole mixtape, Motion Picture, with a few tracks that were already released and a few that people havent even heard,” King Louie told AllHipHop.com during his interview.

Louie credits his rise to success with being visible in the city of Chicago and having lyrics that are believable to his fans in the streets.

“In Chicago, sh*t is about being out and being around the city or whatever and muhf*ckas seeing you,” King Louie explained. “Like it’s about being believable, and if you can you prove what you are speaking about – if you talkin’ bout the sh*t I’m talkin’ bout. So the city just took to it, and just they know it’s real sh*t.  People in the city know me on all different sides, so it’s just like we just rockin’ out, man. They f*ckin’ with the real.”

Working with Jeremiah, LEP, Rockie Fresh, LEP, Chief Keef, YP, and Lil Durk, King Louie says he is confident about the talent that Chicago has to offer.

“Now you got every aspect. We got the LEPs, the OGs of the sh*t, Rockie Fresh, he got the suburbs on lock, and then you got me and Chief Keef and Lil Durk,” King Louie added. “And I’m a big G for the younger youth, but it’s just looking good, man, to have talented young youth that’s going hard, and we puttin’ on for the city, and showing people how sh*t really is. Showing how shawtys really is. I’m tired of sh*t looking so watered down and back backed. This sh*t is real.”
